What Can I Expect
A two-day deer butchery course in East Sussex! Camping overnight in the tranquil High Weald learning how to prepare and cook deer - from the whole carcass, to delicious venison burgers to eat by the campfire.
This course is hosted by Phil, an ex-military man who has travelled the world and is now woodland manager of this forest area in East Sussex. Deer are plentiful here and using the meat is a superb source of sustainable food, a far cry from the industrially produced and processed meats we know too well.
A comfortable expedition tent is basecamp for the course and you're invited to stay on camp the night between the two days of teaching. You are even welcome to arrive the evening before the course starts and set up your camp for an extra night, ready for the teaching starting the next morning.
Dealing with a whole deer carcass might sound daunting at first, but with the right teaching, the right tools and environment, you'll find it is a fascinating, traditional way of sourcing and preparing food that follows in the footsteps of our ancestors.
Phil is a great teacher and leader. He certainly has all the outdoor, survival and bushcraft skills to ensure you have a fun and informative time on your two day course.

When Is It Available
- Selected dates in December, subject to availability
- Current 2024 Date: Saturday 7th December to Sunday 8th December
- The course runs over two days, but you can arrive the night before at 5pm and camp
- The course starts the next morning and you camp overnight
