What's Included

  • Milk composition
  • Use of rennet
  • Selecting and using ripening cultures and starter bacteria
  • Setting the curd; cutting, draining and stirring the curd
  • Moulding, milling and pressing the curd
  • Cheese ageing

Husband and wife team Andy and Kathy Swinscoe are huge fans of cheese and other fine foods. Having studied culinary art and hospitality, Andy literally stuck his nose into the wonderful world of cheesemaking, from seeking out the best Gruyere in Switzerland, to spending time in France learning the cheese ageing skills.

They created this wonderful Yorkshire cheese shop in 2012 and haven't looked back since. It's so much more than a shop. It's a cheesemongers and refiners. It's a meeting place. It's a convivial place to have a drink. And it's also where you get to spend time in the dairy's laboratory to see how cheese is made.

Across the full-day experience, you'll be shown how the very best milk (unpasteurised, from local farms) is transformed into the tastiest cheeses. It's quite an involved process and you'll be there every step of the way, learning all about rennet, the curd, the pressing and more.

Group sizes at the Courtyard Dairy are kept small, so there's plenty of room for everyone to get stuck in with those curds and whey. You'll be making one hard ‘cheddar' type cheese and a soft cheese too. You'll see how the processes are quite different and how cheese ageing is essential for hard cheese!

At the end of your one-day course you'll be heading home with cheeses and some of the materials you used to make cheese. Book your cheesemaking experience in Yorkshire and enjoy your working day in the purpose-built dairy!
